Homemade cream ice cream recipe for 5 kg
Ingredients:
Fresh whole milk: 2,900 g
Fresh cream (35% fat): 800 g
Granulated sugar: 600 g
Dextrose: 200 g
Skimmed milk powder: 150 g
Pasteurized egg yolks: 250 g
Neutral/stabilizer for ice cream: 10 g
Vanilla pod or natural vanilla: to taste
Professional procedure
1. Preparation of the base
In a large saucepan, mix milk, cream, sugar, dextrose and skimmed milk powder. Start heating the mixture to about 40°C.
2. Adding the egg yolks and neutral
At 40°C, incorporate the pasteurized egg yolks and neutral. Add the vanilla seeds or natural extract. Bring the mixture up to 85°C, maintaining the temperature for 2-3 minutes to ensure correct pasteurization.
3. Cooling and maturation
Quickly lower the temperature to 4°C. Leave the mixture to mature for at least 4-6 hours to obtain a more homogeneous structure and improve the creaminess of the ice cream.
4. Churn
