Granulated sugar: 600 g

Dextrose: 200 g

Skimmed milk powder: 150 g

Ice cream stabilizer (neutro): 10 g

Procedure

Preparation of the mixture
Begin by mixing the whole milk, cream, sugar, dextrose, and skimmed milk powder in a pot. Heat the mixture to about 40°C, stirring carefully. -
Add stabilizer and flavorings
Add the ice cream stabilizer and, if you want a more aromatic note, a hint of natural vanilla. Continue stirring to homogenize the mixture. -
Pasteurization
Heat the mixture to 85°C to pasteurize it properly, holding this temperature for 2–3 minutes. -
Cooling and maturation
Quickly cool the mixture down to +4°C and let it mature for at least 4–6 hours. This step is essential to improve the structure and stabilize the mixture. -
Batch freezing
