2.5 liters of fresh whole milk
1.25 liters of fresh cream
750 g of granulated sugar
30 egg yolks (approximately 600 g)

Procedure

Cook the cream

Cool quickly
Use a blast chiller or rapid cooling to bring the temperature of the mixture below 4°C.
Churn
